This vegan, paleo-compliant cheesecake contains cashews, a nutritional powerhouse, with the natural sweetness of raspberry and maple syrup.
Ingredients (makes about 8 servings):
Base ingredients:
1 tbsp coconut oil
1 cup raw walnuts
Pinch of Himalayan salt
6 deglet noor dates
Filling ingredients:
3 tsp vanilla extract
1/2 can organic coconut milk or cream
Handful of raspberries
1 tsp maple syrup (can sub for stevia or monkfruit sweetener)
1 cup raw cashews
Instructions:
1. Blend all base ingredients in a food processor then flatten out in pan with parchment paper.
2. Freeze.
3. While the base is freezing, blend all filling ingredients until smooth. Pour mixture over the base in pan.
4. Freeze for at least an hour.
5. When ready for consumption let the cheesecake defrost in the fridge for at least 30 minutes before you consume.
6. Demolish.

How utterly magnificent, stop-dead-in-your-tracks, awe-inspiring is this view from the top of Boulder Mountain?
If nothing else, standing in reverence of nature's majesty made my troubles feel infinitesmal. Witnessing these rock formations, that have endured the test of time, that have weathered the infinite storms, made evident my own innate resilience---as we are all cut from the same elements. Rather than a rock and an island unto ourselves, our existence is fundamentally interconnected.
Being in nature allows for the emergence of a new consciousness, one that transitions from preoccupation on the minutiae to an awakening to the macrocosmic.
The harmony we experience in nature, the at-home-oneness we feel when immersed in the divine miracle that is planet earth, made me think about how coming home to the natural world can liberate us from our culturally conditioned ruminations.

What you resist, persists, and where your attention goes, energy flows.
What are the narratives, the negative self-talk, the preoccupation on limiting beliefs, that you need to release in order to engender healing?
On the other hand, which patterns and habits do you aspire to develop and cultivate, to ingrain into your routine? The reflective practices that will elevate your consciousness and help you to actualize your healing potential?
Rather than investing in the outcome, divert your resources to invest in the process. This year, commit to a mindfulness practice, carve out space for self-care, emphasize the tonic over the toxic and learn to hone your intuition.
It is in the baby steps, the putting one foot in front of another in spite of adversity, the relaxation response-producing breaths, the active decision to choose gentleness and self-love over pressures and fear, that we find little victories and nurture that soul alchemy that leads to recovery.
